Nice dinner: Moroccan couscous, Moroccan humous, olives and feta cheese and a spring onion salad and rye cracker.. Delishhhh!
Spaghetti and vegetarian meatballs in tomato sauce, delicious and easy peasy!
Recipe:
2 Clove crushed garlic,
1 Chopped onion,
1 Tin chopped tomatoes,
3 Teaspoons of Italian seasoning,
200g Vegetarian mince (I used soya),
Breadcrumbs,
1 Egg,
Teaspoon of paprika,
Spaghetti
For the ‘meatballs’, combine the vegetarian mince, half of the chopped onion, 1 crushed clove of garlic, 2 teaspoons of paprika, a tablespoon of the tinned tomatoes and the egg. Mix well and then add the breadcrumbs gradually until you feel the mixture is firm enough to form into balls. Make the balls and cook on a baking sheet for about 20-25 minutes on 180 degrees celsius.
For the tomato sauce, fry the rest of the onions and garlic in slightly oiled pan until the onions are browned and softened slightly. Then add the rest of the tinned tomates and the Italian seasoning. Leave this to simmer while the meatballs are cooking in the oven, when the meatballs are done place then in the pan with the sauce for a short while to soak up some of the flavour and moisture. Then simply serve with spaghetti and voila! Eat up!

Life update:

I’m gonna do some yoga later but I’m not going to push myself too hard as I’m so tired I could drop at ay second! Still want to perfect my headstand though and I’m getting close to being able to lift my head and balance on my forearms which is pretty cool. I’m going on a run next week and going to enter a 5k for my first ever road race, I know I can run it quickly and relatively easily but I want my first actual race to be short distance. Anyway, hopefully will raise some money for the children’s cancer charity.

I’m thinking of buying some new running shoes and was going to go for either the new Nike Flyknit Lunar1+ or the Nike Free Run+3…Decisions, decisions..
